Really, Really Good Chocolate

 

I’ve finally found some chocolate worth writing about - chocolate made by Seth Ellis Chocolatier.

The world is awash with mediocre chocolate. People binge on mediocrity because they aren’t satisfied. I’d like to suggest trying some really good chocolate; I think you’ll find you want more but don’t crave more because you are satisfied.

John Daly, who trained under Wolfgang Puck, made the best brownies I’ve ever eaten. He said his secret ingredient was cumin. Likewise, Seth Ellis Chocolatier uses non-intuitive ingredients with stunning results. Who ever heard of ginger or nutmeg in chocolate, but they work together beautifully.

I like the subtleness of the flavors: lemon peel melded with dark chocolate (it takes 25 days to make this one), ginger that tastes rich and creamy or a hint of coffee in just the right proportion. They make a truffle that will melt in your mouth and blow your mind.

I appreciate Seth Ellis Chocolatier’s commitment to quality. When an organic raspberry liquor couldn’t be purchase for use in their raspberry truffles they had it made. All their products are organic and free trade, shipped here from all over the world, including Ecuador and Nigeria.
